You’ve been watching over a new generation of culinary professionals, young chefs in the making, here in Charlotte for the past few years. Are you seeing any signs of their impact on the area’s dining scene, and what should we look for from them in the near future?

Students and graduates are having a tremendous impact on the Charlotte dining scene. New restaurants of different cuisines are popping up all over the area, bringing in the opportunity for the students, graduates and new culinary professionals to excel in many different areas in the kitchen.
With time, I look for this new generation of professionals to develop their own philosophy on food and their individual style of cooking. Using their ability to take food to a new level and with their new found knowledge, to pass that on to the generations following them.

On a balmy Monday night I found myself at 300 East, a restaurant-slash-bar located, sensibly enough, right where it ought to be: at 300 East Boulevard. (Before you roll your eyes, please consider that the Fairview Grill is not on Fairview Road—although I hear it used to be—and that Thomas Street Tavern is situated on Thomas Avenue; apparently there is no Thomas Street. You’ll agree that these bits of happy weirdness fit the haphazard street-naming scheme of Charlotte quite nicely.) I was meeting a friend, Michelle, for a late dinner.

When you arrive at The Coffee Cup, the first thing you see is a humble building with a modest sign: Good Food. Reasonable Prices. First opened in 1935, this soul food landmark has given us the fatback, biscuits and red-eye gravy that Charlotteans have come to love. Its not chic or high dollar, but it could not be more honest. Filled seats and a petition from Mecklenburg citizens to stop its demolition make me a believer that this place serves as a beloved meeting place where people from all steps in the social strata can gather for a hot and hearty breakfast.

It was his desire for tea, and lack of a good local cup, that led him to open TEA-ReX, Charlotte’s first tearoom, a decade ago.
